  EQUIPMENT AS OFTEN AS NECESSARY TO MAINTAIN CLEAN.

  (B)      Cleaning - frequency and restrictions.
   
       (1)      The physical facilities shall be cleaned as often as necessary to keep them clean.
   
        (2) Cleaning shall be done during periods when the least amount of food is exposed such as after closing. This
       requirement does not apply to cleaning that is necessary due to a spill or other accident.

  OBSERVED MOP DRYING IN FLOOR SINK. PROVIDE MOP HOOKS TO HANG MOPS SO THAT THEY CAN PROPERLY AIR
  DRY WITHOUT SOILING THE MOP HANDLE OR OTHER EQUIPMENT.

       After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies.

  REACH IN COOLERS @ 41°F AND 36°F. 
   
  GLOVES, TEMPERATURE MEASURING DEVICES, QUAT SANITIZER AND TEST KIT WERE PROVIDED.
   
  WAREWASHING MACHINE IS STILL IN DISREPAIR. DUE TO THE LIMITED AMOUNT OF DISHES AND EQUIPMENT TO
  WASH, THE OPERATOR HAS OPTED TO JUST USE THE THREE COMPARTMENT SINK TO WASH, RINSE AND SANITIZE
  EQUIPMENT.
   
  *A FOLLOW UP OF THE ABOVE CITED VIOLATIONS WILL BE CONDUCTED DURING THE NEXT REGULAR
  INSPECTION.*
